Yummy dinner, but laziness

I decided to do a little experimenting with my cooking tonight-thin spaghetti with my olive oil/lemon/wine sauce, chunks of goat cheese, raisins and walnuts!

But, I have been so lazy when it comes to running and exercising. I’m heading home this coming weekend, so I have been trying to clean up both at work and at home, which is making for some crazy hours, and it’s SO COLD here!! Suddenly dropped down to 37-I don’t like it. I can’t wait for some warm, cozy weather in Iowa come Thursday!

Stress Eating

The last week and a half of my work life have been devoted to a huge private label for my company…we shipped it last night, because they had the meeting today in the midwest. I got to work, thinking I’d have an easy day ahead of me, and spent an hour or so getting started on some new things. Around 10:30, we discovered one of the more important boards didn’t get sent…what ensued is too long of a story to write about here, but for some reason it caused me to eat a TON of food today! This is weird, for me, because I usually have a nervous stomach. 

It started with oatmeal this morning; then I had an iced coffee on my way in, followed by Greek yogurt with blueberries, honey and granola. Then, at lunch, I had a mozzarella, basil and tomato toasted sandwich, organic popcorn, fresh OJ and a brownie bar…followed by half an apple with some peanut butter. When I got home, I had a Kashi fiber bar and some naked juice, drank some water and went for a run. Ending my day of (surprisingly healthy!) eating with an egg, avocado and muenster sandwich. 

It was definitely a lot, but I actually think most days I don’t make 2,000 calories, especially when I work a lot, and the majority of it was quite healthy! Heading to bed soon so I can get up and run in the morning, I have plans that will prevent me from doing so tomorrow night!

Breakfast

Half a cup (dry) oatmeal with a little honey, cinnamon and brown sugar; a medium sized handful of fresh organic blueberries. 

YUM!!

I woke up early enough this morning to go for a run, since I worked too long yesterday to be able to go last night…but as I lay in bed, I realized it may be more beneficial for me to rest long since I don’t know what kind of work day I am going into. Regardless, I should be off at a decent hour and have every intention of coming home to run this evening! I am very much looking forward to it.
